
Ingredients
4 onions (double if using shallots)
1 dl vinegar 12%
2 dl sugar
3 dl water
2 tsp sal
1 tsp white peppercorns
1 bay leaf
Steps:
Peel the onions and then slice them into thinly onion rings
Boil the vinegar, sugar, water, salt, peppercorns and bay leaf into a pickle juice
Let the pickle juice cool for 10 minutes then add the onions
Place the pickled onion in a sterilized glass jar, make sure the pickle juice covers the onions
If the pickle juice does not cover, mix more pickle juice and pour it over the onions. Make more pickle juice by using ratio: 1 part vinegar, 2 parts water and 3 parts sugar
Store in a cool and dark place or in the refrigerator after you have opened the jar. It will then last for several weeks. Remember to use clean kitchen utensils for long lasting pickles
Sliced red onions do not stay fresh for many days. Therefore, always make sure to have some pickle juice ready to pour over your leftover onions. If you need to make a quick pickle, put onions and pickle juice in a vacuum bag and vacuum seal. Vacuum sealing makes the onions pickled and ready in a minute.
