Hotel Bellevue is a hotel and conference facility by the Vättern beach in the small wooden town of Hjo. Hotel Bellevue has an area rich in farmers and local produce for its kitchen that they are trying to find good ways to work with. At the same time, they take their sustainability work very seriously with the greatest focus on locals in all parts of the hotel and restaurant.
Hotel Bellevue's collaboration with Generation Waste
I see the collaboration with you as an important development for us in that work. As a seasonal facility, our kitchen has the important task of maximizing income for a few months of the year while they have to work smart throughout the year. With the shortage of chefs in Sweden, we have been working for several years now with on-site training during the summer. Many are younger & have no previous experience or training in commercial kitchens.
With this tool, we hope to raise awareness and knowledge among our employees. Both permanent, temporary, and hourly staff. We hope for burgeoning inspiration and determination to work together forward in this, says Petra Gustafsson, Site Manager, Hotel Bellevue.
