Sweet potato salad

  • Sweet potatoes 9 kg

  • Black beans, dry product 2.5 kg

  • Olive oil 6 dl

  • Salsa sauce 2 dl

  • Ginger 120 g

  • Red onion, thinly sliced ​​1.5 kg

  • Lime, pressed 1 liter

  • Sambal oelek 2 tbsp

  • Salt about 3 tsp


  1. Soak the beans and cook them the day before

  2. Roast the sweet potatoes in the oven at 200 degrees for about 15-20 minutes until they are browned but not mushy. Cool down.

  3. Meanwhile, make a marinade of oil, salsa, ginger, sambal, and lime juice.

  4. Then mix the beans and red onion with the sweet potato. Be careful not to make the sweet potatoes mushy.

  5. Then pour over the marinade and let it soak for a while.

Served on the salad table, good with steaks
