Roasted pumpkin salad

  • About 800g of pumpkin

  • Rapeseed oil

  • Salt & pepper

  • Creme fraiche

  • Lime

  • Honey


  1. Peel and cut the pumpkin into fine pieces.

  2. Mix the pumpkin bits with rapeseed oil and salt.

  3. Roast the pumpkin at 180-200°C for approx. 10-15 min.

  4. Allow the pumpkin to cool and place it on a salad plate with other salad accessories.

  5. Top with roasted pumpkin seeds, freshly ground black pepper, a little olive oil, and a splash of vinegar.

  6. Or serve with whipped crème fraiche flavored with honey, lime zest, and juice.

Tip! Feel free to roast the pumpkin with a little honey, but then be prepared to lower the temperature or shorten the time so you don't burn the pumpkin.
