Groat sallad

  • 2kg food grains - prepared before

  • Cook with 2 liters of water and broth/salt, if possible on steam in the oven

  • 2-3 kg mixed vegetables: red onion, zucchini, carrot, radishes, and tomato

  • 2 boxes of fresh basil

  • 2 boxes of fresh thyme

  • 1kg small black beans

  • 2 garlic cloves

  • 2 dl olive oil

  • 3 lemons

  • Salt & pepper


  1. Chop all the herbs

  2. Grate the garlic

  3. Drain the beans and mix them with herbs, olive oil, garlic, lemon zest, salt, and pepper

  4. Thinly slice the red onion and radishes

  5. Grate the zucchini

  6. Chop the tomatoes - if they are large. Divide them if they are small

  7. If necessary, peel the carrot and slice it thinly

  8. Mix food grains with the beans and vegetables

  9. Season with salt and lemon juice
